We had Caramelized Pumpkin, recipe twenty-nine, with dinner tonight. The original recipe is actually for butternut squash, but I had a fresh pumpkin that needed to be cut up, so I used that. I also didn't really follow the recipe since I was scaling it back and instead of figuring out the new amounts I needed I just melted some butter, added brown sugar, pepper, and salt, and called it good. I think I overcooked it a bit since the pumpkin was pretty soft, but other than that I thought it turned out well. It wasn't anything particularly exciting though.
